Rice cultivation in Italy came a little later, he says, probably entering from India. The Romans imported it to use as a spice, and there are records that in the Middle Ages it was still being used like that – ground, to thicken sauces and dishes such as blancmange, says Diego Zancani, emeritus professor of medieval and modern languages at Oxford University and author of “ How We Fell in Love with Italian Food.” Before that, locals had harvested wild rice for a couple more thousand years.
